Let me answer all your questions with one big generic answer.
The porn industry itself is a monopoly run by very few parent companies (i.e MindGeek). These parent companies don't describe themselves as porn companies, because they aren't. They are global IT companies active in streaming media, content delivery, online advertising, web development, and SEO. As a developer, that is the company and industry you would be working for, and that is what you would list on your resume. The development and processes will be the same as most companies. The only difference is the content, which is pretty insignificant in the bigger picture. There is no reason to expect the interview process to be harder or easier. There will be no casting couch involved. Inverting binary trees and explaining how hash tables work will be the sexiest things going on in that room.
